Since retiring early from the United States Food and Drug Administration (FDA) to publish my findings of mercury in high fructose corn syrup, I have been studying the role of diet in gene expression. I am a researcher in the field of "nutritional epigenetics." This line of research seeks to explain how what we eat determines how our genes behave.  Elements in our diet, especially in our pre-natal diet, can turn our genes on or off leading to wellness or the development of disease.
